If a project is migrating to a shared COTS/ERP tool, how would CM go about identifying the various computer software components and units of that application?

Not sure why you would want to!

First, which parts configurations does your organization control? I'm not sure what you mean by components and units in this context.

Example: You might have a COTS set such as MS Office 2010. You don't control any of the component parts (Word, Excel, PowerPoint, etc.)

If it is software modified for your organization, then probably the functional requirements would pretty much be the limit of your control. But again, the information in your question is pretty sketchy; so, any answer at this point would be a guess at best.
